Steak and Eggs with Potatoes, Cheddar Cheese, and Onions

Ingredients

1 lb steak (such as ribeye or New York strip)

4 large eggs

2 large potatoes, diced

1 cup shredded cheddar cheese

1 onion, thinly sliced

Sea salt and pepper to taste

Olive oil or butter for cooking

Instructions

Season the steak with sea salt and pepper on both sides. Heat a skillet over medium-high heat and add a little oil. Cook the steak to your desired doneness (usually around 4-5 minutes per side for medium-rare, depending on the thickness of the steak). Once cooked, set aside to rest.

In the same skillet, add a little more oil if needed and cook the diced potatoes until they are golden brown and cooked through, about 10-15 minutes. Season with salt and pepper. Remove from the skillet and set aside.

In the same skillet, add the sliced onions and cook until they are soft and caramelized, about 5-7 minutes. Remove from the skillet and set aside.

In a separate non-stick skillet, cook the eggs to your liking (fried, scrambled, or poached).

To assemble the dish, divide the cooked potatoes onto plates. Top with the cheddar cheese, followed by the caramelized onions. Slice the steak and place on top of the onions. Place the cooked eggs on the side.
