Ingredients

4 pounds pork baby back ribs

1/2 cup prepared mustard

2 teaspoons Paprika

2 tablespoons Tone’s rosemary, garlic seasoning

2 teaspoons coarsely ground pepper

1 teaspoon salt

INSTRUCTIONS

Pre-soak wood chips (Oak or any hard wood) in water for ½ hour.

Preheat wood chips in smoker to get to 225 degrees Fahrenheit.

In a medium-sized saucepan, combine all of the dry rub ingredients except mustard. Set aside. Heat your smoker to 220F.

Meanwhile, prepare the ribs by removing the membrane off the back. Rub mustard all over ribs. The mustard is a binder. You won’t taste it after the ribs are cooked.

Rub the combined dry ingredients on the ribs.

Place the ribs directly on the smoker and smoke for 40 minutes, turning every 25 minutes.

Once the ribs are at 2 ½ hours brush them with mustard or vinegar based BBQ sauce.

Remove ribs to a plate and cover with foil.

Allow the ribs to rest for 5-15 minutes before cutting into them. Serve and enjoy!
