Beef and Shrimp Fried Rice
“Such a great way to use up leftovers. I don’t think I’ve met a single person that does not like Fried Rice. Fried Rice is a very versatile dish, you can easily swap the protein for whatever you prefer.
Ingredients
3 cups cooked long-grain rice
1 tsp peanut oil
2 eggs – beaten
½ pound medium uncooked prawns
½ pound beef cut into thin strips – round, rib eye or sirloin steak are good
1 tsp sesame oil
1 medium onion – chopped
2 cloves garlic – crushed & chopped
2 tsp finely grated fresh ginger
1 cup frozen peas/carrots
4 green onions – diced
1 1/2 Tbsp soy sauce
Directions
Add 1 tsp of the peanut oil
Add the beaten eggs, scramble eggs in the wok.
Add rice
Add and Stir fry beef strips and prawns
Add onion, garlic, ginger, carrots, peas & stir-fry until the vegetables are just tender
Add green onions & soy sauce Stir-fry until heated through Serve and enjoy!
