Shaky beef (Bò Lúc Lắc)

Shaky beef, or bò lúc lắc, is a popular Vietnamese dish with French and Chinese influences. The name lúc lắc means “shaking” or “tossing,” referring to how the cubed beef is shaken in a hot wok to achieve a seared, caramelized exterior while remaining tender inside.

The dish likely originated during the French colonial period in Vietnam (late 19th to mid-20th century), when beef became more accessible, and French cooking techniques influenced local cuisine. It combines elements of French-style steak preparation with Vietnamese flavors, often using soy sauce, fish sauce, garlic, and black pepper.

Bò lúc lắc is typically served with rice, salad, or a tangy dipping sauce, making it a flavorful and well-balanced dish.

Ingredients:

For the Beef Marinade:

  • 1 lb beef sirloin or ribeye, cut into 1-inch cubes
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tbsp honey or brown sugar
  • 1 tsp black pepper
  • 1 tbsp minced garlic
  • 1 tbsp vegetable oil

For Stir-Frying:

  • 2 tbsp vegetable oil
  • 1 small red onion, sliced
  • 1 small bell pepper, sliced (any color)
  • 2 green onions, cut into 1-inch pieces
  • 1 tbsp butter

For the Udon Noodles:

  • 2 packs fresh or frozen udon noodles
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • ½ tsp chili flakes (optional)

Instructions:

  1. Marinate the Beef:In a bowl, combine beef cubes with soy sauce, oyster sauce, fish sauce, honey, black pepper, minced garlic, and oil. Let it marinate for at least 30 minutes (or overnight for more flavor).
  2. Prepare Udon:Cook udon noodles according to the package instructions. Drain and toss with soy sauce, oyster sauce, and sesame oil. Set aside.
  3. Cook the Beef:Heat 2 tbsp oil in a hot pan or wok over high heat. Add the beef cubes and sear for 2–3 minutes on each side until nicely browned. Shake the pan occasionally to ensure even cooking. Remove beef and set aside.
  4. Stir-Fry Vegetables:In the same pan, add 1 tbsp butter and sauté red onion and bell peppers for about 1–2 minutes until slightly softened. Add green onions and cook for another 30 seconds.
  5. Combine:Return the beef to the pan and toss everything together for 1 minute.
  6. Serve:Plate the udon noodles and top with the shaky beef and vegetables. Garnish with fresh cilantro or sesame seeds if desired.
