Seafood Kabobs with Chimichurri Sauce

Ingredients
For the seafood kabobs:
1 pound of large shrimp, peeled and deveined
1 pound of firm fish (such as swordfish or halibut), cut into chunks
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 red onion, cut into chunks
Wooden or metal skewers
For the chimichurri sauce:
1 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
3 cloves of garlic, minced
1/4 cup red wine vinegar
1/2 cup olive oil
1 tablespoon fresh oregano, chopped
Sea salt and pepper to taste
Red pepper flakes (optional, for heat)
Instructions
If you’re using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning on the grill.
Preheat your grill to medium-high heat.
Thread the shrimp, fish, bell peppers, and red onion onto the skewers, alternating the ingredients.
In a small bowl, combine the parsley, cilantro, garlic, red wine vinegar, olive oil, oregano, sea salt, pepper, and red pepper flakes. Mix well to combine.
Brush the seafood kabobs with a little olive oil and season with salt and pepper.
Grill the kabobs for about 3-4 minutes per side, or until the seafood is cooked through and the vegetables are tender and slightly charred.
Serve the seafood kabobs hot off the grill with a generous drizzle of chimichurri sauce on top. Enjoy!
