Salisbury Steak

Salisbury steak originated in the United States in the late 19th century, named after Dr. James H. Salisbury, an American physician who believed that a diet rich in beef could improve health. He promoted ground beef patties as a nutritious meal, especially for patients recovering from illness. The dish gained popularity and became a staple in American cuisine, often served with gravy and accompanied by vegetables. Its roots can be traced back to similar European dishes, such as the German “frikadelle” and the British “hamburger steak.”

Ingredients

For the Salisbury Steak

1 pound ground beef

1/2 cup breadcrumbs

1/4 cup onion, finely chopped

1/4 cup milk

1 egg

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

Sea salt and pepper to taste

For the Gravy

1 tablespoon olive oil or butter

1 onion, sliced

2 cups beef broth

1 tablespoon Worcestershire sauce

1 tablespoon cornstarch (optional, for thickening)

Sea salt and pepper to taste

Instructions

In a large bowl, combine the ground beef, bread crumbs, chopped onion, milk, egg, Worcestershire sauce, garlic powder, sea salt, and pepper. Mix until just combined.

Form the mixture into 4 oval patties.

In a large skillet, heat a bit of oil or butter over medium heat. Add the patties and cook for about 4-5 minutes per side, until browned and cooked through. Remove the patties from the skillet and set aside.

Make the Gravy

In the same skillet, add the sliced onion and sauté until softened, about 5 minutes.

Stir in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan.

If you prefer a thicker gravy, mix the cornstarch with a little water to make a slurry and add it to the gravy, stirring until thickened.

Return the patties to the skillet with the gravy. Simmer for about 5 minutes to heat through and let the flavors meld.

Serve the Salisbury steak with the gravy over mashed potatoes, rice, or pasta.
