Pork Shank

Ingredients
2-3 pounds of pork shank
1 onion, chopped
4 cloves garlic, minced
1 cup chicken or vegetable broth
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon thyme
Sea salt and pepper to taste
1 cup grits (preferably stone-ground)
4 cups water or chicken broth
1 cup shredded cheese (cheddar or your choice)
2 tablespoons butter

Instructions
Season the pork shank with salt, pepper, paprika, and thyme.
In a skillet, heat olive oil over medium-high heat. Sear the pork shank on all sides until browned.
Transfer the pork shank to the crock pot. Add chopped onion, garlic, and broth.
Cook on low for 6-8 hours or until the pork is tender and easily pulls apart.
In a pot, bring water or broth to a boil. Stir in grits and reduce heat to low.
Cook until thickened, about 20-25 minutes, stirring occasionally.
Once cooked, stir in butter, cheese, salt, and pepper until creamy and well combined.
Shred the pork shank and serve it over a bed of cheese grits. Drizzle some of the cooking liquid over the top for added flavor.
