Pork Fried Rice
Pork fried rice is a popular dish with roots in Chinese cuisine, particularly in the Cantonese tradition. The concept of fried rice itself dates back to ancient China, with documented recipes from as early as the Sui Dynasty (581–618 AD). Fried rice was originally a way to use leftover rice, making it a practical and economical dish.
The inclusion of pork in fried rice can be attributed to the widespread use of pork in Chinese cooking, as it is one of the most commonly consumed meats in China. Over time, various regions adapted the basic fried rice recipe to include local ingredients, cooking styles, and flavors.
As Chinese cuisine spread globally, pork fried rice became a staple in Chinese restaurants, especially in Western countries, where it was often adapted to suit local tastes. Today, it remains a beloved dish, enjoyed for its savory flavor and versatility.
Ingredients
2 cups cooked rice (preferably day-old)
1 cup** pork (chopped, cooked, or leftover)
2 tablespoons vegetable oil (or sesame oil)
2 eggs (beaten)
1 cup mixed vegetables (peas, carrots, corn, etc.)
3 green onions (chopped)
3-4 tablespoons soy sauce (to taste)
1 teaspoon garlic (minced)
Sea salt and pepper (to taste)
Instructions
Make sure your rice is cold and clumped together (day-old rice works best).
Chop the pork into small pieces if not already done.
Beat the eggs in a bowl and set aside.
Chop the green onions and prepare the mixed vegetables.
In a large wok or skillet, heat the vegetable oil over medium-high heat.
Add the beaten eggs to the pan. Scramble them until fully cooked, then remove them from the pan and set aside.
In the same pan, add a bit more oil if necessary. Add the minced garlic and stir for about 30 seconds.
Add the mixed vegetables and stir-fry for 2-3 minutes until they’re tender.
Add the chopped pork to the pan and stir for another minute.
Then add the cooked rice, breaking up clumps as you mix it in.
Pour in the soy sauce and stir everything together. Adjust the amount based on your taste preference.
Add the scrambled eggs back into the pan along with the chopped green onions.
Stir everything well and season with salt and pepper.
Cook for an additional minute or two until everything is heated through. Serve hot!
Feel free to customize this recipe by adding other ingredients like bell peppers, broccoli, or any protein of your choice.
For extra flavor, you can add a splash of oyster sauce or hoisin sauce.
