Ingredients

4 pork chops

Sea salt and pepper to taste

2 tablespoons olive oil

1 onion, thinly sliced

3 cloves garlic, minced

1/2 cup chicken broth

1/4 cup balsamic vinegar

2 tablespoons honey or brown sugar

1/4 cup raisins

1/4 cup pine nuts (optional)

Fresh parsley for garnish

Instructions

Season the pork chops with sea salt and pepper on both sides.

In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear them for about 4-5 minutes on each side until they are browned and cooked through. Remove the pork chops from the skillet and set them aside.

In the same skillet, add the sliced onion and garlic. Cook until the onion is softened, about 3-4 minutes.

Add the chicken broth, balsamic vinegar, honey (or brown sugar), raisins, and pine nuts to the skillet. Stir to combine.

Return the pork chops to the skillet, spooning the sauce over them. Reduce heat to low and simmer for another 5-10 minutes, allowing the flavors to meld together.

Taste the sauce and adjust the seasoning if needed with salt and pepper.

Serve the pork chops hot, garnished with fresh parsley. You can also serve them with a side of roasted vegetables, mashed potatoes, or a simple salad.
