Poke Bowl
Poke, a traditional Hawaiian dish, originated from the islands of Hawaii and is derived from the Hawaiian word “pokē,” which means “to slice” or “to cut.” Originally, poke was made with raw fish, particularly tuna, seasoned with various ingredients such as soy sauce, sea salt, and sesame oil, and often garnished with green onions and seaweed. The dish reflects Hawaii’s diverse cultural influences, including Polynesian, Asian, and Western traditions. Over time, poke evolved, incorporating a variety of toppings and flavors, leading to its popularization beyond Hawaii, particularly in mainland United States, where poke bowls featuring a base of rice or greens topped with various proteins and sauces have become trendy.
Ingredients
4 oz salmon fillet, sushi-grade, diced
4 oz tuna fillet, sushi-grade, diced
4 oz shrimp, peeled and deveined, cooked and chopped
2 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp sesame oil
1 tsp rice vinegar
1 tsp honey or sugar (optional)
1 tsp seaweed/sesame seeds
2 cups sushi rice or brown rice, cooked
1 avocado, cubed
1 cucumber, chopped
¼ cup green onions, chopped
¼ cup yellow onion chopped
Instructions
In a mixing bowl, combine the soy sauce, sesame oil, rice vinegar, honey (if using), avocado slices, cucumber, green onions, and yellow onions, and seaweed/sesame seeds .
Add the diced salmon, tuna, and shrimp to the marinade. Toss gently to coat. Let it marinate for about 15-20 minutes in the refrigerator.
Cook the sushi rice or brown rice according to package instructions. Once cooked, let it cool slightly.
In serving bowls, place a scoop of rice at the bottom.
Top the rice with the marinated poke mixture.
Sprinkle with additional seaweed/sesame seeds.
