Panna Cotta
Panna cotta is the kind of dessert recipe that looks complicated but is actually so easy that you can make the base in less than 30 minutes.
Panna Cotta means “cooked cream” in Italian.
Ingredients:
1 envelope unflavored gelatin (about 1 tablespoon)
2 tablespoons cold water
2 cups heavy cream
1 cup half and half ⅓ cup sugar
1½ teaspoons vanilla extract
Instructions
In a very small saucepan sprinkle gelatin over water and let it stand about 1 minute to soften. Heat gelatin mixture over low heat until gelatin is dissolved and remove pan from heat.
In a large saucepan bring cream, half and half, and sugar just to a boil over moderately high heat, stirring.
Pour the panna cotta mixture into eight 4-ounce ramekins and let cool to room temperature.
Cover with plastic wrap and refrigerate until the panna cotta is set but still jiggly, at least 3 hours.
Serve in the ramekins, with berries. Enjoy!
