Pa Jeon (Korean Scallion Pancakes)
Is a Korean dish made from a batter of eggs, wheat flour, rice flour, scallions, and often other ingredients depending on the variety.
Ingredients
2 cups of all-purpose flour
2 cups of water
1 cup of chopped green onions
1/2 cup of chopped kimchi (optional)
1 teaspoon of salt
Vegetable oil for frying
Dipping sauce (soy sauce, rice vinegar, and sesame oil) for serving
Instructions
In a bowl, combine the all-purpose flour, water, and salt. Mix until the batter is smooth.
Add the chopped green onions and kimchi (if using) to the batter and mix well.
Heat a non-stick skillet or frying pan over medium heat and add a thin layer of vegetable oil to coat the bottom.
Once the pan is hot, pour a ladleful of the batter into the pan, spreading it out into a thin, even layer.
Cook the pancake for 2-3 minutes on each side, or until it’s golden brown and crispy.
Remove the pancake from the pan and place it on a paper towel to drain any excess oil.
Repeat the process with the remaining batter, adding more oil to the pan as needed.
Once all the pancakes are cooked, cut them into wedges or squares and serve with the dipping sauce on the side.
