4 orange roughy fillets

For the Mango Salsa:
1 ripe mango, peeled, pitted, and diced
1/2 small red onion, finely chopped
1 red bell pepper, diced
1 jalapeño pepper, seeded and finely chopped
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
Sea salt and pepper to taste
Instructions
Begin by making the mango salsa. In a mixing bowl, combine the diced mango, red onion, red bell pepper, jalapeño, cilantro, and lime juice. Season with salt and pepper to taste. Mix well and set aside.
Season the orange roughy fillets with salt and pepper on both sides. Dredge the fillets in the flour, shaking off any excess.
In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium-high heat. Once the butter has melted and the pan is hot, add the orange roughy fillets. Cook for 3-4 minutes on each side, or until the fish is golden brown and cooked through. Transfer the cooked fillets to a plate and keep warm.
In the same skillet, add the remaining 2 tablespoons of butter and 1 tablespoon of olive oil. Allow the butter to melt, then add the lemon juice to the pan. Cook for a minute, stirring to combine the flavors.
Pour the meunière sauce over the cooked orange roughy fillets. Sprinkle the chopped parsley over the top.
Serve the orange roughy meunière with a generous spoonful of mango salsa on top of each fillet. You can also serve the dish with your choice of side dishes, such as steamed vegetables or rice.
