Marry Me Chicken
It’s said that this chicken dinner is so good that if you make it for your partner, a marriage proposal will be his next question.
Ingredients
6 large chicken thighs
½ teaspoon sea salt
¼ teaspoon ground black pepper
2 tablespoons olive oil
2 tablespoons unsalted butter
6 cloves garlic
1 cup chicken stock
1 can diced tomatoes
1 tablespoon tomato paste
1 cup heavy cream
1 teaspoon chili flakes
¼ teaspoon oregano
¼ teaspoon thyme
⅓ cup sundried tomatoes chopped
1 tablespoon fresh basil leaves
Instructions
Season chicken with sea salt and pepper
In a large skillet, heat olive oil and melt the butter on medium heat. Swirl pan to coat with oil and butter evenly.
Brown the chicken (do not overcrowd and work in batches if needed) for 4-5 minutes on each side or until golden brown and cooked through. Transfer onto a plate, cover, and set aside.
Heat a large skillet over medium low heat. Add the butter, garlic, and tomato paste, sun dried tomatoes; sauté for a few minutes until it’s all soft and fragrant.
Add the cream; whisk to get the tomato paste smooth. Add the broth and thyme sprigs; simmer for 10-15 minutes to thicken the sauce until it reduces and clings to the back of a spoon.
Pop your drained diced tomatoes in the sauce and stir them in. Tuck the cooked chicken into the sauce and spoon a bit of sauce over the top.
Sprinkle some thyme, parsley, or basil over the top to make it look pretty. Serve the pieces of chicken with spoonfuls of the sauce over rice, noodles, or mashed potatoes (personal fave) and a side salad for a beautiful, mega delicious meal.
