Lobster Macaroni and Cheese

Ingredients
1 pound macaroni elbows or shells
2 lobster tails (about 8 ounces each), cooked and chopped
4 tablespoons unsalted butter
1/4 cup all-purpose flour
2 1/2 cups whole milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
2 cups shredded sharp cheddar cheese
1 cup shredded Gruyère cheese
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley

Instructions
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray.
Cook the macaroni according to the package instructions until al dente. Drain and set aside.
In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes to make a roux.
Slowly pour in the milk while whisking constantly to avoid lumps. Continue cooking and stirring until the mixture thickens, about 5-7 minutes.
Reduce the heat to low, then add the salt, black pepper, and cayenne pepper, if using. Stir in the cheddar, Gruyère, and Parmesan cheeses until melted and smooth.
Add the cooked macaroni and chopped lobster to the cheese sauce, stirring until well combined.
Transfer the mixture to the prepared baking dish, spreading it out evenly.
Bake the lobster macaroni and cheese for 25-30 minutes, or until the top is golden and the sauce is bubbly.
Let the dish cool for a few minutes before serving. Enjoy!
