Ingredients
12 oz linguini pasta
1/2 cup of store-bought or homemade pesto
1 pint of cherry tomatoes, halved
2 cloves of garlic, minced
1/4 cup of olive oil
Sea salt and pepper to taste
Grated Parmesan cheese (optional)
Fresh basil leaves for garnish
Instructions
Cook the linguini pasta according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
Add the cherry tomatoes to the skillet and cook for about 5-7 minutes until they start to soften and release their juices.
Add the cooked linguini to the skillet along with the pesto. Toss everything together, adding a little pasta water if needed to loosen the sauce.
Season with sea salt and pepper to taste. Feel free to add more pesto if desired.
Serve the linguini with pesto and tomatoes hot, garnished with grated Parmesan cheese and fresh basil leaves.
