Ingredients

12 oz torchietti pasta

2-3 lemons (for zest and juice)

1/2 cup pine nuts

2 cloves of garlic

1/2 cup grated Parmesan cheese

1/2 cup extra virgin olive oil

Sea salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Cook the torchietti pasta according to the package instructions until al dente. Drain and set aside.

In a dry skillet, toast the pine nuts over medium heat until lightly golden brown. Be careful not to burn them. Set aside to cool.

In a food processor, combine the toasted pine nuts, garlic, lemon zest, and lemon juice. Pulse until the mixture is finely chopped.

Add the grated Parmesan cheese to the food processor and pulse a few more times to combine.

With the food processor running, slowly drizzle in the olive oil until the sauce reaches your desired consistency. You may need to add more olive oil if the sauce is too thick.

Season the sauce with salt and pepper to taste.

Toss the cooked torchietti pasta with the lemon pesto sauce until well coated.

Serve the pasta in bowls and garnish with fresh basil leaves and an extra sprinkle of Parmesan cheese.
