Lasagna Soup

Ingredients
1 lb ground beef or Italian sausage
1 medium onion, chopped
3 cloves garlic, minced
1 (28 oz) can crushed tomatoes
4 cups chicken or vegetable broth
2 cups water
2 tsp dried oregano
1 tsp dried basil
1/2 tsp red pepper flakes (optional)
Sea salt and pepper to taste
8 oz lasagna noodles, broken into pieces
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh basil or parsley for garnish (optional)
Instructions
In a large pot, brown the ground beef or sausage over medium heat. Drain any excess fat.
Add the chopped onion and garlic to the pot. Sauté until the onion is translucent
Stir in the crushed tomatoes, broth, water, oregano, basil, red pepper flakes, salt, and pepper. Bring to a simmer.
Add the broken lasagna noodles to the pot. Cook according to package instructions until al dente, usually about 8-10 minutes.
In a bowl, mix the ricotta cheese, half of the mozzarella, and half of the Parmesan cheese. Set aside.
Once the noodles are cooked, ladle the soup into bowls. Add a scoop of the ricotta cheese mixture on top of each serving. Sprinkle with the remaining mozzarella and Parmesan cheese. Garnish with fresh basil or parsley if desired.
