Korean Barbecue Chicken Breast

Korean barbecue chicken breast, often referred to as “dak-galbi” or simply marinated grilled chicken, has its roots in traditional Korean cuisine, where grilling meats over open flames is a popular cooking method. The dish typically features chicken marinated in a flavorful mixture of ingredients like gochujang (Korean red chili paste), soy sauce, garlic, ginger, and sesame oil, which infuses the meat with a rich, savory taste.

The practice of barbecuing in Korea dates back centuries, with variations across different regions. Chicken became a more popular choice for grilling in the late 20th century, particularly with the rise of modern Korean restaurants and the popularity of Korean cuisine globally. Today, Korean barbecue chicken is enjoyed not only in Korea but also in many other countries, often served with side dishes like kimchi, pickled vegetables, and rice.

Ingredients

1/4 cup soy sauce

2 tablespoons brown sugar

2 tablespoons sesame oil

2 tablespoons rice vinegar

3 cloves garlic, minced

1 inch ginger, grated

1 tablespoon gochujang (Korean chili paste) or to taste

1 tablespoon sesame seeds (optional)

1 green onion, chopped (for garnish)

2 boneless, skinless chicken breasts

Instructions

In a bowl, whisk together soy sauce, brown sugar, sesame oil, rice vinegar, minced garlic, grated ginger, and gochujang until well combined.

Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 4 hours for more flavor).

Preheat your grill or a skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Discard any remaining marinade.

Let the chicken rest for a few minutes, then slice it. Sprinkle with sesame seeds and chopped green onions before serving.

Serve with steamed rice and vegetables for a complete meal.

You can also add other ingredients to the marinade, such as pear or apple for sweetness.
