Jamaican Beef Patties

Jamaican beef patties have their origins in the culinary traditions of Jamaica, influenced by a mix of African, European, and indigenous Taíno cultures. The concept of stuffed pastries can be traced back to the Cornish pasty, brought to Jamaica by British colonizers in the 19th century. Over time, the Jamaican version evolved, featuring a flaky pastry shell filled with spiced ground beef, often seasoned with a blend of herbs and spices, including allspice, thyme, and Scotch bonnet pepper. The bright yellow color of the crust typically comes from turmeric or curry powder, adding a distinctive touch to the dish. Today, Jamaican beef patties are popular street food and a beloved snack worldwide, reflecting the island’s vibrant culinary heritage.

Ingredients

3 cups all-purpose flour

1 teaspoon salt

1 teaspoon turmeric (for color)

1/2 cup cold unsalted butter, cubed

1/4 cup vegetable shortening

4-6 tablespoons cold water

1 lb. ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1-2 Scotch bonnet peppers (to taste), minced

1 teaspoon ground allspice

1 teaspoon dried thyme

1 teaspoon paprika

1 tablespoon soy sauce

1/2 cup beef broth

Sea salt and pepper to taste

1 tablespoon vegetable oil

Instructions

In a large bowl, mix the flour, sea salt, and turmeric.

Add the cold butter and shortening. Use a pastry cutter or your fingers to mix until it resembles coarse crumbs.

Gradually add cold water, mixing until a dough forms. Be careful not to overwork it.

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Make the Filling:

Heat oil in a skillet over medium heat. Add onions and garlic, sauté until soft.

Add ground beef, breaking it apart, and cook until browned.

Stir in Scotch bonnet peppers, allspice, thyme, paprika, soy sauce, and beef broth. Cook until the mixture is thickened. Season with sea salt and pepper.

Preheat your oven to 375°F (190°C).

Roll out the pastry dough on a floured surface to about 1/8-inch thick. Cut out circles (about 6 inches in diameter).

Place a spoonful of filling on one half of each circle, leaving space at the edges.

Fold the other half over and seal the edges by crimping with a fork or your fingers.

Place the patties on a baking sheet lined with parchment paper. Brush the tops with egg wash (1 beaten egg mixed with a splash of water).

Bake for 25-30 minutes or until golden brown.
