Hungarian Goulash

Hungarian goulash, or “gulyás,” is a traditional stew that originates from Hungary. Its roots can be traced back to the 9th century, when Magyar shepherds prepared a simple dish of meat and vegetables cooked in a cauldron over an open fire. The dish evolved over time, particularly in the 19th century, when paprika became a key ingredient, adding flavor and color. Goulash was initially a peasant meal, made with whatever ingredients were available, which included beef, onions, potatoes, and spices. It became popular among the nobility as well, leading to various regional adaptations. Today, goulash is celebrated not just in Hungary but also in many Central European countries, each with its own variations.

 

Ingredients

2 tablespoons vegetable oil

2 pounds beef chuck, cut into 1-inch cubes

2 large onions, chopped

2 cloves garlic, minced

2 tablespoons sweet paprika

1 teaspoon caraway seeds (optional)

Bell peppers, chopped (1 red, 1 yellow, 1 orange)

2 medium carrots, sliced

2 medium potatoes, diced

1 can (14 oz) diced tomatoes (or 2 fresh tomatoes, chopped)

4 cups beef broth

Sea salt and pepper, to taste

Fresh parsley, for garnish

Instructions

In a large pot, heat the vegetable oil over medium-high heat. Add the beef cubes in batches and brown them on all sides. Remove the beef and set aside.

 In the same pot, add the chopped onions and sauté until they become translucent. Add the minced garlic and cook for another minute.

Stir in the sweet paprika and caraway seeds (if using). Add the bell pepper, carrots, and potatoes, mixing well.

 Return the browned beef to the pot. Add the diced tomatoes and pour in the beef broth. Season with salt and pepper.

Bring to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender. Stir occasionally and add more broth or water if needed.

 Once cooked, taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Serve with crusty bread or over egg noodles for a hearty meal.

You can adjust the vegetables based on your preference.
