Grecian-Style Eggplant with Tomatoes and Onions
Grecian eggplant, or Mediterranean eggplant, has its roots in the Mediterranean region and South Asia. It is a staple in Greek cuisine, often used in dishes like moussaka and ratatouille. Tomatoes originated in western South America and were domesticated in Mexico. They were introduced to Europe in the 16th century and quickly became popular in Mediterranean cooking.
Onions have a long history, believed to have been cultivated in Central Asia and the Middle East for thousands of years. They are a fundamental ingredient in many Mediterranean dishes, including those from Greece. Together, these ingredients form the basis of many traditional Greek recipes, reflecting the region’s agricultural heritage and culinary practices.
Ingredients
2 medium eggplants, sliced into rounds
2 tablespoons olive oil
1 large onion, sliced
3-4 ripe tomatoes, chopped (or one can of diced tomatoes)
2-3 cloves garlic, minced
1 teaspoon dried oregano
Sea salt and pepper to taste
Fresh parsley or basil for garnish (optional)
Instructions
Sprinkle the eggplant slices with salt and let them sit for about 30 minutes to draw out excess moisture. Rinse and pat dry.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the eggplant slices in batches, cooking until browned and tender, about 4-5 minutes per side. Remove and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute.
Add the chopped tomatoes to the skillet, along with the oregano, salt, and pepper.
Cook for about 10 minutes, stirring occasionally, until the tomatoes have broken down and created a sauce.
Layer the cooked eggplant back into the skillet with the tomato and onion mixture.
Gently stir to combine and heat through for another 5 minutes.
Garnish with fresh parsley or basil if desired. Serve warm as a main dish or a side. You can add feta cheese on top for a traditional touch. Serve with crusty bread or over rice for a complete meal. Enjoy your Grecian-style eggplant dish!
