Fried Rice Medley

Fried Rice Medley with beef, shrimp, scallops, and chicken is a delicious and hearty dish. 

Ingredients

2 cups of cooked, cooled white rice

1/2 pound beef, sliced into thin strips

1/2 pound shrimp, peeled and deveined

1/2 pound scallops

1/2 pound boneless, skinless chicken breast, diced

1 cup mixed vegetables (e.g., carrots, green beans)

3-4 cloves of garlic, minced

1 small onion, diced

3 eggs, beaten

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 teaspoon sugar

Sea salt and pepper to taste

3 tablespoons olive oil

Instructions

Heat a tablespoon of cooking oil in a large wok or skillet over medium-high heat. Add the beef and stir-fry until browned. Remove the beef from the wok and set aside.

Add another tablespoon of oil to the wok and stir-fry the shrimp and scallops until they turn opaque and are just cooked through. Remove them from the wok and set aside.

Add the remaining oil to the wok and stir-fry the chicken until cooked through. Remove the chicken from the wok and set aside.

In the same wok, add a little more oil if needed and sauté the garlic and onion until fragrant.

Push the garlic and onion to the side of the wok and pour the beaten eggs into the wok. Scramble the eggs until they are cooked through.

Add the mixed vegetables to the wok and stir-fry for a few minutes until they are heated through.

Add the cooked rice to the wok and stir-fry with the vegetables, egg, garlic, and onion for a few minutes.

Return the beef, shrimp, scallops, and chicken to the wok.

In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, sugar, salt, and pepper. Pour this sauce over the fried rice and mix well to ensure that the rice and other ingredients are coated evenly.

Continue to stir-fry the rice for a few more minutes until everything is heated through and well combined.

Taste the fried rice and adjust the seasoning if necessary.

Once everything is heated through and well mixed, remove the wok from the heat and serve the medley fried rice with beef, shrimp, scallops, and chicken hot.
