Focaccia Sandwich

Focaccia is a flat leavened oven-baked Italian bread, similar in style and texture to pizza; in some places, it is called pizza bianca. Focaccia can be served as a side dish or as sandwich bread and it can be round, rectangular, or square shape.

Ingredients

4 romaine lettuce leaves

4 sliced kosher pickles

2 slices of onion

4 slices of tomatoes

8 slices of cucumber

1 9-10 inch round garlic Italian flatbread (focaccia)

¼ cup mayonnaise

4 ounce thinly sliced capicola

4 ounce thinly sliced soppressata

2 ounce thinly sliced mortadella

4 ounce thinly sliced mozzarella cheese

Directions

Cut the focaccia in half horizontally. Using a spoon, hollow out the inside of the top half, leaving a 3/4-inch shell.

Spread the one side with mayonnaise. 

Layer with capicola, soppressata, and mortadella. 

Add romaine lettuce, tomatoes, pickles, onions, and cucumbers. 

Top with cheese. 

Top with the other half of focaccia.

Tightly wrap the Italian sandwich in foil or plastic wrap to tote. 

Chill for up to 24 hours. 

To serve, cut into wedges and insert toothpicks to hold the Italian sandwich recipe together. Enjoy!
