Fish Tacos
Fish tacos are said to have originated in Baja California, Mexico. The exact origin is a bit unclear, but it is believed that they were created by local fishermen in the coastal areas of Baja California who used fresh fish caught during their fishing expeditions to make quick and tasty meals. The popularity of fish tacos has since spread beyond Mexico and can now be found in many parts of the world, especially in regions with a strong influence from Mexican cuisine. The dish typically consists of grilled or fried fish, often seasoned with a variety of spices, served on a tortilla and topped with various ingredients such as salsa, cabbage, avocado, and a creamy sauce like crema or mayonnaise. Fish tacos have become a beloved dish for many people due to their delicious flavors, versatility, and the ability to customize them to individual tastes.
Ingredients
For the Fish
1 lb. white fish fillets (such as cod, perch, or halibut)
1 tablespoon olive oil
Tone’s Rosemary garlic seasoning
Sea salt and pepper to taste
Juice of 1 lime
For the Slaw
2 cups shredded cabbage (purple or green)
1/4 cup chopped cilantro
1 tablespoon lime juice
1 tablespoon olive oil
Sea salt and pepper to taste
For the Tacos
8 small corn tortillas
1 avocado, sliced
Lime wedges, for serving
Optional toppings: salsa, sour cream, honey mustard or hot sauce
Instructions
Prepare the Fish
In a small bowl, mix together the olive oil, Tone’s Rosemary garlic seasoning, sea salt, and pepper.
Rub the seaoning over the fish fillets.
Heat a skillet over medium-high heat and add the fish. Cook for about 3-4 minutes on each side, or until the fish is cooked through and easily flakes with a fork.
Squeeze lime juice over the cooked fish and set aside.
Make the Slaw
In a large bowl, combine the shredded cabbage, cilantro, lime juice, olive oil, sea salt, and pepper. Toss until well mixed.
Assemble the Tacos
Warm the corn tortillas in a dry skillet or microwave.
Break the fish into chunks and divide among the tortillas.
Top with slaw, avocado slices, and any additional toppings you like.
Serve with lime wedges on the side.
