Fiochetti with Pink Sauce and Tiger Shrimp
Fiocchetti is a type of pasta that is similar to small ravioli or tortellini. Pink sauce, also known as vodka sauce, is a creamy tomato sauce that’s often made with a touch of vodka and heavy cream. When combined with tiger shrimp, it creates a rich and flavorful dish.
Ingredients
1 pound fiocchetti pasta
1 pound tiger shrimp, peeled and deveined
2 tablespoons olive oil
3 cloves garlic, minced
1/2 cup vodka
1 can (28 ounces) crushed tomatoes
1 cup heavy cream
1/2 teaspoon red pepper flakes
Sea salt and pepper to taste
Fresh basil, chopped (optional)
Grated Parmesan cheese (for serving)
Instructions
Cook the fiocchetti
Bring a large pot of salted water to a boil. Add the fiocchetti pasta and cook according to the package instructions until al dente. Drain the pasta and set it aside.
Cook the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.
Make the Pink Sauce
In the same skillet, pour in the vodka and allow it to cook for a minute to evaporate the alcohol. Add the crushed tomatoes, heavy cream, red pepper flakes, salt, and pepper. Stir the sauce until well combined. Simmer the sauce for about 10-15 minutes, stirring occasionally, until it thickens slightly.
Once the sauce has thickened, add the cooked shrimp to the skillet with the pink sauce. Stir gently to coat the shrimp with the sauce. Let it simmer for an additional 2-3 minutes to heat the shrimp through.
Add the cooked fiocchetti to the skillet with the pink sauce and shrimp. Toss everything together until the pasta is well coated with the sauce. Remove the skillet from the heat.
Garnish the fiocchetti with chopped fresh basil (optional) and grated Parmesan cheese. Serve the dish hot and enjoy!
