Eggs with Provolone Cheese, Pesto, and Bacon on Ciabatta Bread

Ingredients

4 large eggs

Sea salt and pepper to taste

4 provolone cheese slices

2 tablespoons pesto sauce

6 slices of bacon

2 ciabatta rolls

Butter for toasting the rolls

Instructions

Cook the bacon in a skillet over medium heat until crispy. Remove the bacon from the skillet and place it on a paper towel to drain excess grease. Once cooled, chop the bacon into small pieces.

In a bowl, whisk the eggs with sea salt and pepper until well combined.

Heat a non-stick skillet over medium heat and add the whisked eggs. Cook the eggs, stirring occasionally, until they are just set but still slightly creamy.

Add the shredded provolone cheese to the scrambled eggs and stir until the cheese is melted and incorporated.

Slice the ciabatta rolls in half and toast them with a little butter in a separate skillet until golden brown.

Spread pesto sauce on the bottom half of each toasted ciabatta roll.

Spoon the scrambled eggs with provolone cheese over the pesto on each ciabatta roll, then top with the chopped bacon.

Place the top half of the ciabatta roll on each sandwich to complete it.
