Crab Cake Po’boy
The Crab Cake Po’boy is a variation of the traditional Po’boy sandwich that originated in Louisiana, particularly in New Orleans. The Po’boy is a submarine sandwich traditionally made with roasted meat or fried seafood served on French bread. The Crab Cake Po’boy specifically features a crab cake as the main filling instead of the more common roast beef or fried shrimp.

Ingredients
For the crab cakes
1 pound lump crab meat
1/2 cup breadcrumbs
1/4 cup mayonnaise
1 large egg
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 tablespoon lemon juice
1/4 cup chopped fresh parsley
1/4 cup chopped green onions
1/2 teaspoon Old Bay seasoning
Sea salt and pepper to taste
2 tablespoons butter or oil for frying
For the sandwich
French bread or baguette, sliced lengthwise
Lettuce
Tomato slices
Remoulade sauce or tartar sauce
Instructions
In a large bowl, combine the lump crab meat, breadcrumbs, mayonnaise, egg, Dijon mustard, Worcestershire sauce, lemon juice, parsley, green onions, Old Bay seasoning, sea salt, and pepper. Mix gently until well combined, being careful not to break up the crab meat too much.
Form the mixture into crab cakes of your desired size and thickness.
Heat butter or oil in a skillet over medium heat. Cook the crab cakes for about 3-4 minutes on each side, or until golden brown and cooked through.
While the crab cakes are cooking, prepare the sandwich by spreading remoulade sauce or tartar sauce on the sliced French bread.
Place lettuce and tomato slices on the bottom half of the bread.
Once the crab cakes are cooked, place them on top of the lettuce and tomato.
Close the sandwich with the top half of the bread.
Cut the sandwich in half and serve immediately.
