Cordon Bleu

In the culinary world, “cordon bleu” refers to a type of dish that typically consists of a piece of meat, such as chicken, veal, or pork, that is pounded thin, wrapped around ham and cheese, breaded, and then fried or baked. This dish is believed to have originated in Switzerland or France, but it has become popular in many countries around the world and is often served in restaurants and made at home.

Ingredients

4 boneless, skinless chicken breasts

Sea salt and pepper

4 slices of ham

4 slices of Swiss cheese

Lingonberry sauce

1/2 cup all-purpose flour

1 teaspoon paprika

2 eggs

1 cup breadcrumbs

– 2 tablespoons butter

– 2 tablespoons olive oil

Instructions

Preheat your oven to 350°F (175°C).

Place each chicken breast between two pieces of plastic wrap and pound them to about 1/4 inch thickness.

Season the chicken breasts with sea salt and pepper. Place a slice of ham and a slice of Swiss cheese on each chicken breast. Roll up each chicken breast, securing with toothpicks if necessary.

In a shallow dish, mix the flour and paprika. In another dish, beat the eggs. Place the breadcrumbs in a third dish.

Dredge each chicken breast in the flour mixture, then dip in the beaten eggs, and finally coat with breadcrumbs.

In a large skillet, melt the butter with the olive oil over medium-high heat. Brown the chicken breasts on all sides.

Transfer the browned chicken breasts to a baking dish and bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the cheese is melted add Lingonberry sauce.

Remove the toothpicks before serving.
