4 cod fillets

2 tbsp olive oil

1 zucchini, diced

1 yellow bell pepper, diced

1 red bell pepper, diced

For the wild rice

1 cup wild rice

2 cups water or vegetable broth

Instructions

Preheat the oven to 375°F (190°C).

Prepare the cod

Season the cod fillets with sea salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear the cod fillets for 2-3 minutes on each side. Remove the cod from the skillet and set aside.

In the same skillet, add the remaining olive oil. Sauté the minced garlic for about 1 minute. Add the diced tomatoes, black olives, capers, dried oregano, sea salt, and pepper. Cook for another 5 minutes, stirring occasionally.
