The Chivito Sandwich

The Chivito

The Chivito is the national sandwich of Uruguay. Its importance in the country is on a par with hamburgers in the United States, fish and chips in the U.K., the Cuban sandwich in Cuba, and steaks in Argentina. This sandwich is not for the faint of heart or appetite, either.

The Chivito (which translates as “little goat”) is a serious sandwich filled with meat. The star ingredient is a slice of churrasco (beef), which is thinly sliced grilled beef. This is topped with slices of ham, bacon, lettuce, tomato, melted mozzarella or your choice of cheese, and a fried egg. You might want to eat this with no accompaniments since it is a balanced meal in itself, with plenty of protein, vegetables, and bread. A beer is a great way to wash it all down.

Ingredients

4 slices bacon

1 thinly sliced skirt steak

Sea salt, Tone’s rosemary, garlic seasoning

Freshly ground black pepper

2 large eggs

Large sandwich bun, such as large ciabatta

2 tablespoons mayonnaise

2 tablespoons Remoulade sauce

1 lettuce leaf

2 slices deli cut ham

2 slices of tomato

2 slices of cheese (I like Swiss)

2 teaspoons butter

Instructions

In a large skillet over medium heat, cook the bacon slices until they are crispy.

Set aside on paper towels to cool.

Slice the filet in half crosswise to make 2 thin steak slices.

Use a mallet to pound the steaks even thinner.

Sprinkle them with sea salt, black pepper and Tone’s rosemary, garlic seasoning.

Heat the skillet over medium-high heat until hot and place steaks on the skillet.

Cook for about 2 minutes per side, or until they reach the desired doneness.

Place on paper towels to cool. Wipe the skillet clean.

Add butter.

Fry the eggs sunny-side up until they are done to your preference.

Preheat your oven.

Slice the bun and place in the oven at 350F.

Bake until golden.

Place the lettuce pieces on the bottom half of the bun.

Top sandwich with 2 slices of bacon, a slice of beef, a slice of ham, a lettuce leaf, a slice of tomato, and a slice of mozzarella or your choice of cheese.

Place the uncovered sandwich under the broiler briefly to melt the cheese.

Keep a close eye on the sandwich so the cheese doesn’t burn.

Remove the sandwich from the oven and place fried eggs over the bacon, then top with the other half of the bun. Serve immediately. Enjoy!
