Chicken Prosciutto Tortellini

Ingredients
For the Tortellini
1 pound of chicken breast, diced
4 ounces of prosciutto, chopped
1 package of fresh tortellini
Sea salt and pepper to taste
2 tablespoons olive oil
2 cloves garlic, minced
1/2 cup grated Parmesan cheese
Fresh chopped parsley for garnish
For the Marinara Sauce
2 tablespoons olive oil
1 onion, finely chopped
3 cloves garlic, minced
1 can (28 ounces) crushed tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
Sea salt and pepper to taste
1/2 teaspoon sugar (optional, to balance the acidity of the tomatoes)
Instructions
Cook the tortellini according to the package instructions. Drain and set aside.
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced chicken and chopped prosciutto to the skillet. Season with salt and pepper. Cook until the chicken is no longer pink and the prosciutto is slightly crispy, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes. Remove from heat and set aside.
In a separate saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
Pour in the crushed tomatoes, dried oregano, and dried basil. Season with salt and pepper to taste. If the marinara sauce is too acidic, you can add a small amount of sugar to balance the flavors. Simmer the sauce for 15-20 minutes, stirring occasionally.
Once the marinara sauce is ready, add the cooked tortellini to the skillet with the chicken and prosciutto. Pour the marinara sauce over the tortellini and chicken, and gently stir to combine.
Sprinkle the grated Parmesan cheese over the tortellini and marinara sauce. Garnish with fresh chopped parsley.
Serve the chicken prosciutto tortellini in marinara sauce hot, and enjoy!
