Chicken Noodle Soup

Ingredients
1 tablespoon olive oil
1 cup diced onion
1 cup diced carrots
1 cup diced celery
2 cloves garlic, minced
8 cups chicken broth
2 cups cooked chicken, shredded or diced
2 cups uncooked noodles
1 teaspoon dried thyme
1 bay leaf
Sea salt and pepper to taste
Chopped fresh parsley for garnish (optional)
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are tender, about 5-7 minutes.
Add the minced garlic to the pot and cook for an additional 1-2 minutes.
Pour in the chicken broth and add the shredded or diced cooked chicken, dried thyme, and bay leaf. Bring the soup to a simmer.
Once the soup is simmering, add the uncooked noodles. Cook for 8-10 minutes, or until the noodles are tender.
Taste the soup and season with salt and pepper as needed.
Remove the bay leaf from the pot.
Ladle the chicken noodle soup into bowls and garnish with chopped fresh parsley if desired.
