Chicken Marsala

Chicken Marsala is a classic Italian-American dish that features tender chicken breasts cooked in a savory Marsala wine sauce. It’s often served with a side of creamy mashed potatoes or rice. 

Ingredients

4 boneless, skinless chicken breasts

Sea salt and pepper to taste

1/2 cup all-purpose flour

4 tablespoons olive oil

8 ounces mushrooms, sliced

1/2 cup Marsala wine

1/2 cup chicken broth

4 tablespoons unsalted butter

2 tablespoons chopped fresh parsley (optional for garnish)

Instructions

Season the chicken breasts with sea salt and pepper, then dredge them in flour, shaking off any excess.

In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until they are golden brown and cooked through, about 6-7 minutes per side. Remove the chicken from the skillet and set it aside.

In the same skillet, add the sliced mushrooms and sauté them until they are golden and tender, about 5 minutes.

Pour the Marsala wine and chicken broth into the skillet with the mushrooms, and bring the mixture to a simmer. Cook for a few minutes to reduce the liquid slightly.

Stir in the butter until it’s melted and the sauce has thickened slightly.

Return the cooked chicken breasts to the skillet, turning them to coat them in the sauce. Let them simmer in the sauce for a few minutes to heat through.

To serve, place a chicken breast on each plate and spoon the Marsala sauce and mushrooms over the top. Garnish with chopped parsley if desired. Add your favorite rice or creamy mashed potatoes. Enjoy!
