Chicken Enchiladas with Green Chili Sauce
Creamy, cheesy, and so very easy—these comforting chicken enchiladas are slathered in tangy green enchilada sauce and are everything you are craving today.
Ingredients
For the green chili sauce
1 can (4 ounces) diced green chilies
1/2 cup chicken broth
1/2 cup sour cream
1/2 cup chopped fresh cilantro
1 teaspoon ground cumin
Sea salt and pepper to taste
For the enchiladas
2 cups cooked, shredded chicken (you can use rotisserie chicken for convenience)
1 cup shredded cheese (such as Monterey Jack or cheddar)
1/2 cup chopped onion
1/2 cup chopped fresh cilantro
1 teaspoon ground cumin
1 teaspoon chili powder
Sea salt and pepper to taste
8-10 corn tortillas
Additional shredded cheese and chopped cilantro for garnish
Instructions
Preheat your oven to 350°F (175°C).
To make the green chili sauce, combine the diced green chilies, chicken broth, sour cream, chopped cilantro, and ground cumin in a blender or food processor. Blend until smooth. Season with sea salt and pepper to taste. Set the sauce aside.
In a large bowl, mix the shredded chicken, shredded cheese, chopped onion, chopped cilantro, ground cumin, chili powder, sea salt, and pepper.
Warm the corn tortillas in the microwave or on a skillet until they are pliable.
Spoon a portion of the chicken and cheese mixture onto each tortilla, roll them up, and place them seam-side down in a greased baking dish.
Once all the enchiladas are assembled, pour the green chili sauce over the top, spreading it evenly.
Sprinkle additional shredded cheese over the top of the enchiladas.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the enchiladas are heated through.
Garnish with chopped cilantro before serving.
