Chicken Chowder
This Chicken Chowder is absolutely BURSTING with flavor and texture. It’s perfectly creamy without being too heavy. You can make enough for the whole family in less than an hour
Ingredients
2 tablespoons butter
1 onion, chopped
2 garlic cloves, minced
2 carrots, diced
2 celery stalks, diced
1 teaspoon dried thyme
1/4 cup all-purpose flour
4 cups chicken broth
2 cups cooked chicken, diced or shredded
2 cups potatoes, peeled and diced
1 cup corn kernels (fresh, frozen, or canned)
1 cup heavy cream
Sea salt and pepper to taste
Instructions
In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion, garlic, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
Stir in the dried thyme and flour, and cook for an additional 2 minutes, stirring constantly.
Gradually pour in the chicken broth, stirring constantly to avoid lumps from forming. Bring the mixture to a simmer.
Add the diced chicken, potatoes, and corn to the pot. Simmer the chowder for about 15-20 minutes, or until the potatoes are tender, stirring occasionally.
Stir in the heavy cream and let the chowder simmer for an additional 5 minutes. Season with sea salt and pepper to taste.
Ladle the chicken chowder into bowls. Enjoy!
