Ingredients
2 boneless, skinless chicken breasts
Sea salt and pepper, to taste
1 tablespoon olive oil
1 cup fresh mozzarella cheese, sliced
1 large tomato, sliced (or a few small heirloom tomatoes)
Fresh basil leaves
Balsamic glaze
Garlic powder (optional)
Italian seasoning (optional)
Instructions
Preheat your oven to 375°F (190°C).
Butterfly the chicken breasts.
Season the chicken breasts with sea salt, pepper, garlic powder, and Italian seasoning on both sides.
Stuff the chicken breasts with sliced tomatoes, mozzarella cheese and basil and close with toothpicks.
Heat the olive oil in a large oven-safe skillet over medium-high heat.
Add the chicken breasts and sear for about 5-7 minutes on each side, until golden brown.
Once the chicken is seared, transfer the skillet to the preheated oven.
Bake for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
