Ceviche

Ceviche is a popular dish in many Latin American countries, particularly in Peru. It is typically made with raw fish that is marinated in citrus juices, such as lime or lemon juice, which “cooks” the fish by denaturing its proteins. Other ingredients may include onion, cilantro, chili peppers, salt, and sometimes additional seasonings like garlic or cumin. The dish is usually served cold and can be accompanied by various sides, such as avocado, sweet potato, or plantain chips. Ceviche is a refreshing and flavorful dish that is popular in warm weather, and its popularity has spread around the world.

Ingredients

1 lb. seafood mix

¾ cup Lime Juice

¾ cup Lemon Juice

¼ cup Olive Oil

1 cup Red Onion, chopped fine

3 baby bell peppers, red, orange, yellow, chopped

1 cup Cilantro, chopped

1 ​Cucumber, peeled and diced

1 Avocado, peeled, cut into small pieces

Salt and Pepper to taste

Directions

Drain seafood mix after thawing.

Place in a glass or ceramic bowl.

Add lime and lemon juice, cover and refrigerate for half hour.

Add chopped red onions.

Refrigerate for half hour.

Add oil.

Before serving, add cilantro, cucumber and avocado and stir lightly.

Using a large spoon add ceviche to a martini glass or small bowl. Enjoy!
