Cauliflower Parmesan Soup

Ingredients

1 head of cauliflower, chopped into florets

1 onion, chopped

2 cloves of garlic, minced

– 4 cups vegetable or chicken broth

1 cup milk or cream

1/2 cup grated Parmesan cheese

2 tablespoons butter

Sea salt and pepper to taste

Olive oil

Fresh parsley, chopped (for garnish)

Instructions

In a large pot, heat some olive oil over medium heat. Add the chopped onion and garlic and sauté until fragrant, about 2-3 minutes.

Add the cauliflower florets to the pot and sauté for another 5 minutes, stirring occasionally.

Pour in the vegetable or chicken broth, bring to a boil, then reduce heat and simmer for about 15-20 minutes or until the cauliflower is tender.

Using an immersion blender or regular blender, blend the soup until smooth and creamy.

Return the soup to the pot and stir in the milk or cream, grated Parmesan cheese, and butter. Season with sea salt and pepper to taste.

Cook for an additional 5 minutes, stirring occasionally, until the soup is heated through and creamy.

Serve the soup hot, garnished with chopped fresh parsley and an extra sprinkle of Parmesan cheese if desired.
