Blue Cheese Salad with Mini Garlic Croutons

A blue cheese salad is a delicious and flavorful dish that combines the pungent and creamy blue cheese with a variety of fresh and crisp ingredients.
The base of the salad is a bed of vibrant, leafy mixed greens. These greens provide a refreshing and slightly bitter taste that complements the rich flavors of the blue cheese.

Ingredients

mixed greens

1 cup radicchio

1/2 cup crumbled blue cheese

1/2 cup croutons

2 tablespoons extra-virgin olive oil

1 tablespoon balsamic vinegar

Sea salt and pepper to taste

Instructions

In a large salad bowl, combine the mixed greens and radicchio

In a small bowl, whisk together the olive oil and balsamic vinegar to make the dressing. Season with sea salt and pepper to taste.

Pour the dressing over the salad and toss gently to coat the ingredients evenly.

Add the crumbled blue cheese to the salad and toss again, being careful not to break up the cheese too much.

Sprinkle the croutons over the top of the salad just before serving.

Serve the blue cheese salad immediately as a side dish or as a light lunch. Enjoy!
