Beef Burrito
A carne asada burrito is a popular Mexican dish that consists of a tortilla filled with grilled, thinly sliced marinated beef, typically referred to as “carne asada.” The beef is seasoned with a blend of flavors such as garlic, lime juice, cumin, chili powder, and other spices. The marinade infuses the meat with a delicious, tangy, and savory taste.
Ingredients
1 pound carne asada (thinly sliced flank steak)
4 large flour tortillas
1 cup cooked Spanish rice
1 cup cooked pinto or black beans
1/2 cup diced tomatoes
1/2 cup diced onions
1/4 cup chopped fresh cilantro
1/4 cup sour cream
1/4 cup guacamole
1/4 cup shredded cheese (such as cheddar or Monterey Jack)
Sea salt and pepper, to taste
Marinade
1/4 cup orange juice
1/4 cup lime juice
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon dried oregano
Salt and pepper, to taste
Instructions
In a bowl, combine all the marinade ingredients. Season the carne asada with salt and pepper, and place it in a resealable plastic bag. Pour the marinade over the meat, seal the bag, and refrigerate for at least 1 hour, or preferably overnight.
Preheat your grill or stovetop grill pan over medium-high heat. Remove the carne asada from the marinade and discard the excess marinade.
Grill the carne asada for about 4-6 minutes per side, or until it reaches your desired level of doneness. Remove from the grill and let it rest for a few minutes. Then, thinly slice the meat against the grain.
Warm the flour tortillas on the grill or stovetop until pliable. Alternatively, you can wrap them in aluminum foil and warm them in a preheated oven at 350°F (175°C) for about 10 minutes.
Assemble the burritos by placing a spoonful of Spanish rice, a spoonful of beans, a few slices of carne asada, diced tomatoes, diced onions, chopped cilantro, sour cream, guacamole, and shredded cheese onto each tortilla.
Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a burrito.
