BBQ Pulled Pork with Rigatoni and Pesto
If you’ve never made pulled pork, it is seriously one of the easiest things in the world to make.
Ingredients
1 pork shoulder (pork butt)
3½ cups dry, uncooked pasta (I used rigatoni)
¾ cup Sweet baby Rays barbecue sauce
1 tsp dried Italian seasoning
1 tsp garlic powder
1 tbsp sea salt
¼ cup chopped fresh oregano
Pesto for topping
Instructions
Throw a pork shoulder (aka pork butt) in the slow cooker with a bit of water and add your seasonings with dousing of barbecue sauce and, 6-8 hours later, pull it out, shred it with a couple forks, and coat it generously with more barbecue sauce. Done!
Cook pasta according to package directions. When pasta is ready, drain and toss with BBQ pork. Top pesto and serve immediately. Enjoy!
