Baked Eggplant
These Mediterranean-inspired baked eggplant melts are easy to prepare and can be served as a side dish or a vegetarian main. Think of this recipe as a deconstructed, healthier version of eggplant Parmesan.
Ingredients
Olive oil
2 eggplants, halved length ways (4 slices per eggplant)
10 cherry tomatoes
1 can tomato sauce
1 x ball mozzarella, drained
1/4 cup chopped parsley
Instructions
Heat oven to 350
Add tomato sauce over eggplant slices
Arrange the sliced cherry tomatoes and mozzarella on top of the eggplant.
Then put in the oven for 20 minutes or until the cheese has melted. Sprinkle parsley over eggplant slices. Enjoy!
