Ingredients
1 ½ cups all-purpose flour
½ cup unsalted butter, cold and cubed
¼ cup powdered sugar
1/4 teaspoon salt
1 large egg yolk
2-3 tablespoons cold water
4-5 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
1/4 cup granulated sugar (adjust based on apple sweetness)
1 teaspoon cinnamon
1 tablespoon lemon juice
1 tablespoon butter, melted
1/2 cup sliced almonds
2 tablespoons apricot jam (optional, for glazing)
Instructions
In a mixing bowl, combine flour, powdered sugar, and salt.
Add the cold butter and mix until the mixture resembles coarse crumbs.
Stir in the egg yolk and enough cold water to form a dough.
Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
In a large bowl, toss the sliced apples with sugar, cinnamon, and lemon juice. Let it sit for about 10 minutes to soften.
Preheat your oven to 375°F (190°C).
On a floured surface, roll out the chilled dough to fit a 9-inch tart pan. Press it into the pan and trim any excess.
Arrange the apple slices in the tart shell, overlapping them as you go.
Brush the melted butter over the apples and sprinkle with shaved almonds.
Bake in the preheated oven for 30-35 minutes or until the apples are tender and the crust is golden.
If desired, warm the apricot jam and brush it over the tart just after removing it from the oven for a shiny finish.
Allow the tart to cool slightly before slicing. Serve warm or at room temperature.
