Thai Green Curry with Chicken, Vegetables, and Jasmine Rice

Thai green curry, known as “Kaeng Khiao Wan” in Thai, is a popular dish originating from Thailand. It is a flavorful and aromatic curry made with a combination of green curry paste, coconut milk, meat (such as chicken), vegetables, and herbs. Here is a brief overview of the ingredients used in Thai green curry with chicken, vegetables, and jasmine rice.

Ingredients

1 lb chicken breast, thinly sliced

1 can (14 oz) coconut milk

2-3 tbsp green curry paste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small eggplant, diced

Handful of Thai basil leaves

1 tbsp fish sauce

1 tbsp soy sauce

1 tbsp vegetable oil

1 tbsp sugar

1 cup jasmine rice

2 cups water

Sea salt and pepper to taste

Instructions

Prepare the Jasmine Rice

Rinse the jasmine rice under cold water until the water runs clear.

In a medium saucepan, combine the rice and water.

Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.

Cook the Chicken

Heat vegetable oil in a large skillet or wok over medium-high heat.

Add the sliced chicken and cook until browned, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Make the Green Curry

In the same skillet, add a little more oil if needed.

Add the green curry paste and stir-fry for about a minute until fragrant.

Pour in the coconut milk and stir well to combine with the curry paste.

Add the sliced bell peppers and diced eggplant. Cook for about 5 minutes until the vegetables are slightly tender.

Combine the Ingredients

Add the cooked chicken back to the skillet.

Season with fish sauce, soy sauce, sugar, sea salt, and pepper.

Simmer for another 5-10 minutes until the chicken is cooked through and the flavors have melded together.

Finish and Serve

Stir in the Thai basil leaves and cook for another minute.

Taste and adjust seasoning if necessary.

Serve the Thai green curry with chicken and vegetables over jasmine rice.
