Tomato Bisque

Tomato bisque is a type of soup that originated in France. The word “bisque” traditionally refers to a smooth and creamy soup made from seafood, particularly shellfish. However, tomato bisque is a variation of this dish that substitutes tomatoes for the seafood.

Ingredients

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

2 (14.5 oz) cans of diced tomatoes

1 (14 oz) can of tomato sauce

1 cup chicken or vegetable broth

1 teaspoon sugar

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 cup heavy cream

Sea salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until the onion is translucent, about 5 minutes.

Add the diced tomatoes, tomato sauce, chicken or vegetable broth, sugar, basil, and oregano to the pot. Stir to combine.

Bring the mixture to a simmer and let it cook for about 15-20 minutes, stirring occasionally.

Remove the pot from the heat and use an immersion blender to blend the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a blender and blend until smooth, then return it to the pot.

Stir in the heavy cream and season with sea salt and pepper to taste. Simmer for an additional 5 minutes.

Ladle the soup into bowls and garnish with fresh basil leaves if desired. Enjoy!
