Beef Quesadilla

Quesadillas originated in Mexico. They are a traditional Mexican dish that consists of a tortilla filled with cheese (and often other ingredients such as meats, beans, vegetables, or spices) and then cooked until the cheese is melted. The word “quesadilla” is derived from the Spanish word “queso,” which means cheese. 

Ingredients

1 lb ground beef

1 small onion, chopped

1 bell pepper, chopped

2 cloves of garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

Sea salt and pepper to taste

4 large flour tortillas

2 cups shredded cheese (such as cheddar or Mexican blend)

Optional toppings: salsa, sour cream, guacamole, etc.

 

Instructions

In a large skillet, cook the ground beef over medium-high heat until browned and no longer pink. Drain excess fat.

Add the chopped onion, bell pepper, and garlic to the skillet with the beef. Cook for a few minutes until the vegetables are softened.

Add the chili powder, cumin, sea salt, and pepper to the skillet. Stir well to combine and let the flavors meld for a couple of minutes. Remove from heat.

Heat a separate skillet over medium heat. Place a tortilla in the skillet and sprinkle a layer of shredded cheese on half of the tortilla.

Spoon some of the beef mixture over the cheese, then sprinkle more cheese on top. Fold the tortilla in half to cover the filling.

Cook the quesadilla for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.

Remove the quesadilla from the skillet and let it cool slightly before cutting into wedges.

Repeat with the remaining tortillas and filling ingredients.

Serve the beef quesadillas hot with your favorite toppings such as salsa, sour cream, guacamole, etc.
