Chicken Lo Mein

Chicken lo mein is a popular Chinese-American dish that is a staple in many Chinese restaurants in the United States. The dish is a combination of soft noodles, stir-fried vegetables, and chicken, all tossed together in a savory sauce. 

Ingredients

8 oz (225g) lo mein noodles or spaghetti

2 chicken breasts, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon hoisin sauce

1 teaspoon sesame oil

2 tablespoons vegetable oil

3 cloves garlic, minced

1 teaspoon grated ginger

1 cup sliced vegetables (such as bell peppers, carrots, and snow peas)

1 cup sliced mushrooms

2 green onions, sliced

Sea salt and pepper to taste

Instructions

Cook the lo mein noodles according to the package instructions. Drain and set aside.

In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce, and sesame oil. Set aside.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the sliced chicken and stir-fry until cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, and stir-fry for about 30 seconds until fragrant.

Add the sliced vegetables and mushrooms to the skillet and stir-fry for 2-3 minutes until they are crisp-tender.

Return the cooked chicken to the skillet. Add the cooked noodles and the sauce mixture. Toss everything together until well combined and heated through.

Season with sea salt and pepper to taste. If the noodles seem dry, you can add a splash of chicken broth or water to loosen them up.

Remove the skillet from the heat and stir in the sliced green onions.

Serve the chicken lo mein hot, garnished with additional sliced green onions if desired.
