Pesto Tortellini

Ingredients
1 pound (450g) cheese or spinach tortellini
1/2 cup (120ml) basil pesto (store-bought or homemade)
1/4 cup (60ml) grated Parmesan cheese
2 tablespoons (30ml) extra virgin olive oil
Sea salt and pepper to taste
Fresh basil leaves for garnish (optional)
Instructions
Cook the tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to the package instructions, usually around 7-9 minutes, or until al dente. Drain the tortellini and set aside.
Prepare the pesto: In a large bowl, mix the basil pesto and extra virgin olive oil together until well combined.
Toss the tortellini: Add the cooked tortellini to the bowl with the pesto mixture. Gently toss the tortellini until they are well coated with the pesto.
Add Parmesan cheese: Sprinkle the grated Parmesan cheese over the pesto-coated tortellini and toss again to distribute the cheese evenly.
Season to taste: Taste the tortellini and add salt and pepper as needed.
Transfer the pesto tortellini to a serving dish or individual plates. If desired, garnish with fresh basil leaves for a pop of color and extra flavor. Enjoy!
