Apple and Brie Stuffed Pan-fried Chicken

Apple and brie-stuffed pan-fried chicken with sweet Asian chili sauce is a dish that seems to be a fusion of different culinary traditions. The combination of ingredients such as brie cheese, apples, and sweet Asian chili sauce suggests a blend of European and Asian flavors.

 

 

Ingredients

For the stuffed chicken

4 boneless, skinless chicken breasts

1 apple, peeled and sliced

4 oz brie cheese, sliced

Sea salt and pepper, to taste

1 tablespoon olive oil

For the sweet Asian chili sauce

1/2 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon freshly grated ginger

1 clove garlic, minced

1 tablespoon honey

1 teaspoon cornstarch

2 tablespoons water

Instructions

Preheat your oven to 375°F (190°C).

To prepare the stuffed chicken, use a sharp knife to cut a pocket into the side of each chicken breast. Be careful not to cut all the way through.

Stuff each chicken breast with sliced apples and slices of brie cheese. Season the outside of the chicken breasts with salt and pepper.

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed chicken breasts to the skillet and cook for about 3-4 minutes on each side, or until golden brown.

Transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the chicken is cooked through and the cheese is melted.

While the chicken is baking, prepare the sweet Asian chili sauce. In a small saucepan, combine the sweet chili sauce, soy sauce, rice vinegar, sesame oil, ginger, garlic, and honey. Bring the mixture to a simmer over medium heat.

In a small bowl, whisk together the cornstarch and water to create a slurry. Stir the slurry into the saucepan with the sweet chili sauce mixture. Cook, stirring constantly, until the sauce thickens, about 2-3 minutes. Remove from heat.

Once the chicken is done, remove it from the oven and let it rest for a few minutes. Serve the stuffed chicken with the sweet Asian chili sauce drizzled on top.

This dish pairs well with steamed rice and stir-fried vegetables. Enjoy!
